Bananas are a great snack to have when you need some energy, but if you don’t eat them quickly enough, they’ll go mushy. A great way to use up mushy or overripe bananas is to put them to good use in a banana bread.
Baker, recipe developer and TikTok creator Jane Dunn, more popularly known as Jane’s Patisserie, recently shared her take on the classic bake. She also includes a sweet ingredient to make the banana bread “utterly delicious”, and it’s something we all have in our kitchen.
Jane’s video in the video’s caption: “A lovely moist banana bread studded with chocolate chips, ideal for using up any bananas that are on the turn! The soured cream is the perfect addition for creating a gorgeous texture to this bake, and the chocolate chips are optional, but they add a little extra treat to every slice!”

In the video, Jane said: “I know we all remember the banana bread craze of lockdown. But honestly, banana bread has been around for so long, and it is an ever-popular bake, and this Chocolate Chip Banana Bread is utterly delicious, incredibly easy to bake and always a hit with the crowds.”
To give the banana bread a burst of bitter sweetness, the baker adds chocolate chips. Using sour cream in the batter helps keep it super moist when baking.
The baker discussed the inclusion of soured cream on her website: “I used soured cream as I found it baked best with it – and four large ripe bananas worked best for me. Banana bread doesn’t rise that much, so it will look like a lot of mix, but trust me, it works.”
Jane opts for dark chocolate, explaining: “I went for dark chocolate because I love it.”
Jane’s video has already been viewed over 13,400 times, receiving 453 likes and six comments at the time of writing. One account said: “Can’t beat a good banana bread.”
Freckles commented: “Ooh, I made chocolate chip banana bread a few days ago with melted, drizzled chocolate swirled into the top.”
So if you’re looking for a delicious way to elevate a simple banana bread that’s super easy, here’s how you can create Jane’s recipe at home.
Ingredients
- Four ripe bananas (plus one for the top)
- 125g unsalted butter
- 150g light brown sugar
- 250g self-raising flour
- One tsp baking powder
- 1/2 tsp ground cinnamon
- Three medium eggs
- 75g soured cream
- One tsp vanilla extract
- 150g chocolate chips
Method
Preheat the oven to 180°C/160°C (fan) and line a 2lb loaf tin. Mash the bananas, setting aside one for decoration.
In a new bowl, add the butter and sugar and beat. Add the eggs, banana, soured cream and vanilla and beat again.
Add in the flour, baking powder, and cinnamon and beat again. Fold the chocolate chips through, then pour into the tin.

Add a banana on top for decoration if you want.
Bake in the oven for 60 to 70 minutes. After 30 minutes, quickly and carefully cover lightly with foil to prevent it from browning too much. Once baked, leave to cool fully and enjoy.
